Prepare the Brussels Sprouts: Rinse the Brussels sprouts under cold water. Trim the stem ends and remove any wilted outer leaves. Slice each sprout in half lengthwise.
Season the Sprouts: In a large bowl, toss the halved sprouts with olive oil, sea salt, black pepper, and chopped rosemary (if using), ensuring all sides are evenly coated.
Slice the Turkey Bacon: Using a sharp knife and cutting board, slice each turkey bacon strip lengthwise, then crosswise, to create four thin strips per slice (40 total).
Wrap the Sprouts: Wrap one strip of Turkey-Bacon around each sprout half, starting on the flat side and finishing underneath to secure. Place them cut-side down on a parchment-lined baking tray.
Bake – First Phase: Place the tray in a preheated oven at 400°F (200°C) and bake for 20 minutes, or until the Turkey-Bacon begins to crisp and the sprouts soften.
Brush with Maple Syrup: Remove the tray from the oven. Using a silicone brush, lightly glaze each bacon-wrapped sprout with maple syrup.
Final Bake for Crisping: Return the tray to the oven. Increase the temperature to 425°F (220°C) and bake for another 8–10 minutes, until golden, crispy, and caramelized.
Serve: Let the bites cool slightly. Transfer to a serving platter with cocktail picks or forks. Serve warm as a festive appetizer or side dish.
