  • Cook the lentils uncovered for 20-25 minutes until tender but still holding their shape. Drain any excess water and set aside to cool slightly.
  • In a small dry skillet over medium heat, toast the ground cumin, coriander, smoked paprika, and cinnamon for about 1-2 minutes, stirring constantly to prevent burning. Remove from heat.

  • In a mixing bowl, whisk together the lemon juice, minced garlic, remaining 2 tablespoons olive oil, toasted spices, 0.5 teaspoon salt, and black pepper until well combined.
  • Add the cooked lentils and roasted carrots to the bowl with the dressing. Toss gently to combine all ingredients.
  • Fold in the chopped parsley and cilantro just before serving to maintain their freshness and vibrant color.
  • Taste and adjust seasoning with additional salt, pepper, or lemon juice if desired.
  • Serve the Moroccan lentil and roasted carrot salad warm, at room temperature, or chilled as preferred.

Notes

Cook lentils until tender but not mushy; rinse well before cooking. Roast carrots evenly cut for uniform caramelization. Toast spices briefly in a dry pan to enhance flavor. Store salad in an airtight container refrigerated up to 3 days; flavors improve overnight. Substitute carrots with sweet potatoes or butternut squash if desired. Add toasted nuts or fresh vegetables for variation. Serve chilled or at room temperature. Use fresh lemon juice and herbs for best taste.
